Had conch salad made right in front of me on the beach in Nassau and I will never be the same. The guy cracked open the conch shell, cleaned it in about 30 seconds, diced it up with tomato, onion, cucumber and pepper, squeezed fresh lime and sour orange over it, and handed it to me in a cup. The conch was so fresh it was almost sweet. Ate it standing in the sand with my feet in the water. That is the Bahamas in one perfect moment.
