Everyone does the Big Buddha and Ngong Ping 360 but there's a trail on the west side of Lantau that most people don't know about. Starts near Pui O, goes through the buffaloes, ends at a hidden beach I've never seen more than 5 people at.

You need to go at low tide for the best experience. The rock formations are incredible. Bring water - there's no vendor for about 3 hours.
