Going to say it: Stumptown coffee is not worth the hype.

The real gems:
- Broadcast Coffee in Beacon Hill
- Elm Coffee in SLU - the roaster used to work at Stumptown and does it better
- Analog Coffee in Capitol Hill - best flat white in the city
- Lighthouse Roasters in Fremont - OG, still holds up

Seattle's problem is gentrification eating the good spots. The old roasters are being replaced by venture-capital-funded places that all taste the same.
